Chia Seed Balls
1/4 cup honey
1/4 cup unrefined
1/2 cup finely shredded raw dried coconut
1/2 cup raw cashews
1/4 tsp ground vanilla or
alcohol free liquid vanilla
3 – 4 tablespoons chia seeds
Pinch of Himalayan salt
Step 1: Place coconut
and cashews in blender and blend until you reach flour-like consistency (about
10 seconds). You can also use your food processor for this too.
Step 2: Remove from
blender and place in bowl. Melt coconut oil over a double boiler until liquid.
Add honey, coconut oil, vanilla, chia seeds and sea salt to bowl and mix until
well combined, scraping sides a couple of times.
Step 3: Chill in
refrigerator for 45 mins. Once mixture is chilled, scoop by teaspoonfuls
and roll into balls and chill again for at least 10 minutes. Keep refrigerated
until ready to eat.
You can also freeze any extra balls.
