How to cook Quinoa
1 cup of quinoa any colour ( I like the red one )
1 Tbs coconut oil
1 – 2 cups of water ( for added nutrients stock can be used )
Salt to taste
Always rinse quinoa before cooking as you need to rinse off any residue.
Add the coconut oil to a shallow pan (frypan) and once warm add the quinoa and toss for about a minute or two.
Add the quinoa to a pot of boiling water and when it comes to the boil again bring down to a lower heat.
Cook for 12 to 13 minutes and let sit for a minute or two. Until all water evaporates.
If you need to rinse off under the water do so but you should have some nice light quinoa ready to serve.
I generally cook a largish batch and store it in the fridge and use it with my salads and sometimes put it into soups. It is great with lightly steamed veges as well. I have stored it for 5 days. Depends on your fridge!
Remember I am not 100 % RAW, I do love my steamed veges.
