2 large zucchini unpeeled and washed
1 to 2 cloves garlic depending on your taste
1/4 cup tahini
2 to 3 Tbsp. of lemon juice once again depending on taste and how wet you want the hummus to be
1 tsp of cumin
I chop the zucchini into smaller pieces and then place all ingredients into high speed blender, and mix till smooth. Refrigerate.
Serve with dehydrated crackers or a plate of vege crudites.
I found this to be an awesome alternative to using chickpeas which is beautiful however tends to produce wind…lol
